When Trader Joe's handed me flattened bananas, I made granola.
Really good, delicious granola. Perfect for snacking, with greek yogurt, over ice cream or just plain milk.
Banana Coconut Pepita

White Chocolate Granola
Ingredients:
- 3 cups rolled oats
- 1/4 cup vegetable oil
- 1/3 cup agave syrup
- 1/2 cup pepitas
- 1/2 cup shredded coconut
- 1 cup dried bananas chopped into small pieces
- 3/4 cup white chocolate chips or chopped pieces
Directions:
- Preheat oven to 350 degrees F.
- Line a baking sheet with parchment paper.
- In a bowl stir together the rolled oats, vegetable oil, agave syrup and pepitas.
- Spread out on the baking sheet and bake for about 10 minute or until the mixture starts to brown.
- Remove baking sheet from oven and stir the mixture around and return to oven for another 5-10 minutes or so to make sure all of the mixture it evenly roasted.
- Place in large bowl and stir in the shredded coconut, dried bananas and white chocolate pieces.
- Store in an airtight container.
What an irresistible combo for granola! I'm intrigued by the flattened banana! I don't have Trader Joe's and am seeing all kinds of good stuff from them tonight.

ReplyDeleteI had never heard of flattened bananas until now. Now that I see that they are, in fact, dried banana chips, it all makes sense. For some reason, when I first saw your picture, I thought they were just a bunch of squished banana in a bag. Dried banana granola is so much better than squished banana granola. Thanks for brightening my day (and making me look a little silly) :)
