Whole Wheat Burrata Arugula Flower Pizza & May's Funny Food Blogger Posts


Well I am surely late to the party lagging behind in my posts. Memorial Day weekend is a huge blur and it seems I was launched into June without my knowledge.


A dear friend came over for dinner recently. These arugula flowers purchased at the Union Square farmers' market were just begging to be put on a pizza.  I dipped into my stash of hoarded Vidalia onions (only because I really liked my guest) and caramelized a few to add another layer of flavor to the pizza. The onions, velvety burrata cheese and the flowers were wrapped in a rustic whole wheat pizza crust.


I may have over did the carbs but I just had to roast these lovely red potatoes in a bit of olive oil and tossed them with my homemade pistachio pesto. Organic chicken breast was marinated in homemade herb olive oil and simmered with added fresh lemon juice.
