Whole Wheat Burrata Arugula Flower Pizza

Well I am surely late to the party lagging behind in my posts. Memorial Day weekend is a huge blur and it seems I was launched into June without my knowledge.

A dear friend came over for dinner recently. These arugula flowers purchased at the Union Square farmers’ market were just begging to be put on a pizza.  I dipped into my stash of hoarded Vidalia onions (only because I really liked my guest) and caramelized a few to add another layer of flavor to the pizza. The onions, velvety burrata cheese and the flowers were wrapped in a rustic whole wheat pizza crust.

I may have over did the carbs but I just had to roast these lovely red potatoes in a bit of olive oil and tossed them with my homemade pistachio pesto. Organic chicken breast was marinated in homemade herb olive oil and simmered with added fresh lemon juice. 


Oh, and there were also the last of the homemade lilac chocolate truffles for dessert 🙂

This was the perfect meal for an early summer dinner on the deck paired with a glass of pinot grigio and wonderful company. 

I am hoping for many more of these this summer. Sigh.

Whole Wheat Burrata Arugula Flower Pizza

For the crust I used the recipe for Amazing Whole Wheat Pizza Crust from Allrecipes.com and pressed it into a round pizza pan.

For the topping:

Ingredients:

  • 2 large pieces of buratta cheese
  • 2 large Vidalia onions chopped into pieces
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1/2 cup arugula flowers
Directions:
  • Preheat oven to 425 degrees F.
  • Place cheese on a small plate and press down gently squeezing excess water out of the cheese and drain the liquid off.
  • Slice cheese into pieces.
  • In a large frying pan heat the olive oil and butter together over medium heat.
  • Add chopped onions and toss with a wooden spoon to coat.
  • Cook onions until they turn a golden brown color, remove from heat.
  • Layer onions onto the pizza dough.
  • Place cheese pieces over the top of the onion.
  • Bake 20 minutes or until crust is crispy.
  • Remove from oven, let stand 10 minutes, sprinkle with arugula flowers, slice and serve.

How beautiful and what a great idea. When I still had a garden, the arugula always seemed to bolt to seed too quickly. This would have been a great use for the flowers!
