Gin & Tonic Fudge

Ever since I saw that fabulous White Russian Fudge over at Culinary Concoctions by Peabody, I was inspired to start experimenting with making my own drink in a fudge.

Cue the unopened bottle of Saphire gin that has been sitting on my shelf for months. A perfect reason to bust it open.

A lime gin fudge was created and a layer of tonic flavored fudge was added on the top. I don’t know how much this tastes like a gin and tonic (a bit) but is it ever delicious.

Gin & Tonic Fudge

For the Lime Gin Fudge Layer:

Ingredients:

  • 28 ounces white chocolate
  • 1- 14 ounce can of sweetened condensed milk
  • 2 tablespoons freshly squeezed lime jiuce
  • 2 teaspoons lime zest
  • 1/4 teaspoon salt
  • 1/2 cup gin

Directions:

  • Grease an 8X8 inch pan and set aside
  • In a heat proof bowl, microwave the chocolate, sweetened condensed milk and salt 30 seconds at a time. Remove the bowl and stir the mixture in between.
  • When everything is melted and smooth, stir in the gin, lime juice and zest.
  • Pour into the pan and place in the freezer while you prepare the top layer.

For the Tonic Fudge Layer:

Ingredients:

  • 2 cups tonic water
  • 10 ounces white chocolate
  • 7 ounces condensed milk

Directions:

  • Place the tonic in a heavy bottomed sauce pan over medium heat. When the tonic becomes syrupy, remove from heat and set aside.
  • Place the chocolate and condensed milk in a heat proof bowl and microwave 30 seconds at a time. Remove the bowl and stir the mixture in between until everything is melted together.
  • Stir in the tonic syrup.
  • Remove the lime gin fudge from the freezer and spread the tonic fudge layer on top.
  • Place in the fridge until hardened. Cut into squares and serve.

Can you clarify the instructions for the tonic layer? or the ingredients…. there is a typo in there somewhere. Do you mean you make a syrup from the tonic and then add more tonic later? or there is gin in that layer too but just not in the ingredients?
The look fab btw really want to try them 🙂

I love following your blog because you are very out of the box in a good way! This recipe looks wonderful. I've been meaning to find a recipe where I can use some vegan condensed milk I made and this could be it!
