The Life Changing Loaf of Bread & April’s Funny Food Blogger Posts

One of the things I miss most about Germany are bakeries on every corner. They all offer an amazing variety of dense, nutty, grainy baked breads in every shade of brown. Honestly up until this point I have been too lazy to try an recreate one of my favorites. All that kneading and waiting for dough to rise. No thanks. I just usually snitch a piece of my husband’s stash of Meistermacher bread and call it a day.

Then I found this amazing and ridiculously easy recipe.

During one of those frantic times I was running through the internets like a madwoman on a mission I got stopped in my tracks by this recipe. Since then I’ve been cranking out two of these loaves every week for the past several weeks and I just can’t get enough of it. 

There is no flour in this bread but lots of seeds and fiber rock stars. Just for the record, I have no objections or allergies to flour. This bread is for everyone whether gluten free or just gluttonous.

My life has significantly ramped up in the past year and a half since our move back to the States.  A full time job, helping my elderly mom, being a wife, volunteering as a board member on two organizations and an active member in another. Add in this blog, three households to manage and various assorted other obligations, I need all the energy I can get.

Recently I started caring less about calories and fat and spent time seeking out healthy recipes to provide me with the energy I need to power through 12 hour days.

One of my favorite ways to eat this bread is smeared with  avocado, sometimes with a bit of seasoned salt and pepper on top. The bread is dense and nutty and paired with the smooth mellow avocado is, well, just sheer perfection. A small serving goes a long way.

I sometimes use agave syrup instead of maple and I mix up the 1/2 cup of nuts with lots of variety just to keep it interesting. However,  I am a long way from being bored with this bread.

Yum- could go savory with avocado and a little pesto maybe or sweet with some homemade blackberry jam… or how about a little cream cheese?
All the ingredients are in my granola making box so I'm on this pronto.

I can't believe that this is a bread! It looks like a power bar and a scrumptious one at that. Loved your sentence…This bread is for everyone whether gluten free or just gluttonous.

I love hearty loaded with seed bread! You are right Europe is the best when it comes to bakeries. In the US people are worried too much about calories! Thanks for sharing.
