Valentine’s Day Pearl Studded Cherry Heart Marshmallows

by Lora Wiley-Lennartz
Marshmallows are something I never dreamed I could make myself. Once I learned a few years ago, I made batch after batch.
It seems like I  haven’t made marshmallows in forever  (actually it’s been about a year) so I guess the romance was over. What better time to ignite marshmallow passion than for Valentine’s Day?
The first idea was to swirl these with Valentine’s colors, red, lavender and pinks, just like I did for Easter themed marshmallows a few years ago to create a tie dyed effect.  However, once these pearls caught my eye, I was a goner and decided to stud them with candy jewels. I’m so glad I did.

The cherry flavor added a tint of pink to the marshmallow batter so I left it naked not add ing any additional coloring. Up close and personal, these are very pale pink.

I probably over jeweled them. I’m like that. No restraint with anything sparkly or jewel like.

I even double sided them with pearls, pouring a layer in the pan before adding the marshmallow batter.

These were delicious. Soft, pillowy cherry flavored treats that are perfect for Valentines Day and so pretty. Sure to get and “ooh” or an “ahh” or both.

I used a great recipe I go to most, adapting Shauna Server’s Pink Bubblegum Marshmallow recipe. Also, if you haven’t checked out her book, Marshmallow Madness, I highly recommend it.

I exchanged cherry flavor for bubblegum and didn’t add any color. After greasing the pan I poured in a layer of different color and size candy pearls. Immediately after transferring the marshmallow batter from the mixer into the pan, I sprinkled (poured) the candy pearls over the top and gently patted them down  before it had time to set. Once the marshmallows had set, I used a heart cutter to cut them and dusted the bottoms which were a bit sticky with powdered sugar.

I am such a sucker for pearl dragées and have to keep myself from buying them at random (the $17 price tag at our fancy-schmancy "gourmet market" helps with that a bit). Homemade marshmallows are the best. I really don't like the kind from the store but I will totally gobble up scratch-made marshmallows.
