Buttered Popcorn Marshmallows Brushed with Oscar Gold

Everyone excited about the Oscars this weekend? Me too. For the first time in a long time I won’t have to set my alarm and get up at 2 am-ish to watch the Academy Awards from Germany. Alone. Oscar parties are scarce there. The only ones I knew of were thrown by US expats the next day with everyone viewing the pre-recorded show.  I love the spirit of that but somehow, it always felt a bit lame.

This year I was invited to an Oscar party to watch the ceremony in real time and I made marshmallows to bring with me. These are a cute, quick and easy make ahead treat. To be honest, I had this idea rather late in the game, had no buttered popcorn flavoring on hand and could not find any in time. My local cake decorating store had every flavor but that one and when I finally found a bottle on line, it was too late to order it.


Desperate times equal desperate measures so I MacGyvered my marshmallow flavoring by popping up a small handful of popcorn, dousing it in vodka and letting it sit for two days in a plastic container fitted with a lid. Once strained, it did smell like popcorn. I added about a half a teaspoon of butter flavoring and used the result to flavor these marshmallows. It worked but the flavor is very subtle. I recommend getting the flavoring if you want a strong buttered popcorn flavor. You can order some here.

The recipe I used was the same on I have used for all other marshmallows posts on this blog. It’s from Piece of Cake. Her recipe it’s quick, relatively simple and always turns out right. I adapted her recipe for bubble gum marshmallows found here only switching out the flavoring and food coloring. Shauna has a book out now, Marshmallow Madness with tons of other recipes for making marshmallows. 

Full disclosure: I do not know Shauna. I only stumbled upon and used one of her marshmallow recipes when I wanted to make them for the first time. Because of my experience, I am definitely ordering her book.

Anyway back to these marshmallows. In addition to the buttered popcorn flavoring, I added a bit of yellow food coloring. When the marshmallows had set and I cut them into squares. However, instead of covering the whole marshmallow with powdered sugar, I left the sticky sides alone and applied gold disco dust with a small paintbrush to the sticky parts. The usual method of mixing the disco dust with alcohol does not work well so I don’t recommend it.

I totally forgot that the Oscars were on. I don't think I've seen the ceremony since high school… Ooops!

I really need to get a stand mixer so I can try all the fabulous marshmallows you've posted. I made homemade marshmallows once and they burned out the motor in my hand mixer! I had some fabulous freshly-made, still-a-bit-warm strawberry marshmallows from a stand by the rue Blanche métro station in Paris. We could smell the hot sugar down in the métro station and knew we had to have some of those marshmallows! I've been wanting to make some at home ever since.
